Saffron Rice Pudding (Sholeh Zard)

Description
A fragrant Persian rice pudding flavored with saffron and rose water, perfect for a sweet Iftar treat.
Ingredients
- 1 cup short-grain rice, washed and drained
- 8 cups water
- 2 cups sugar
- 1/2 tsp saffron threads, ground and dissolved in 2 tbsp hot water
- 1/2 cup rose water
- 1/4 cup slivered almonds
- 1/4 cup pistachios, chopped
- 1 tsp cinnamon powder for garnish
Instructions
- 1In a large pot, bring water to a boil, add rice and cook until very soft, about 30 minutes.
- 2Add sugar and stir until dissolved.
- 3Add saffron water and rose water, stir well.
- 4Reduce heat to low and simmer for 15 minutes, stirring occasionally.
- 5Add half of the almonds and pistachios, mix well.
- 6Pour into serving dishes and let cool.
- 7Garnish with remaining nuts and cinnamon powder.
- 8Refrigerate for at least 2 hours before serving.
