Saffron Rice Pudding (Sholeh Zard)

Description

A fragrant Persian rice pudding flavored with saffron and rose water, perfect for a sweet Iftar treat.

Ingredients

  • 1 cup short-grain rice, washed and drained
  • 8 cups water
  • 2 cups sugar
  • 1/2 tsp saffron threads, ground and dissolved in 2 tbsp hot water
  • 1/2 cup rose water
  • 1/4 cup slivered almonds
  • 1/4 cup pistachios, chopped
  • 1 tsp cinnamon powder for garnish

Instructions

    In a large pot, bring water to a boil, add rice and cook until very soft, about 30 minutes.

    Add sugar and stir until dissolved.

    Add saffron water and rose water, stir well.

    Reduce heat to low and simmer for 15 minutes, stirring occasionally.

    Add half of the almonds and pistachios, mix well.

    Pour into serving dishes and let cool.

    Garnish with remaining nuts and cinnamon powder.

    Refrigerate for at least 2 hours before serving.
