Description
A hearty fava bean dish that's high in protein and fiber, perfect for Suhoor to keep you full throughout the day.
Ingredients
- 2 cans (400g each) fava beans, drained and rinsed
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1/2 tsp paprika
- Salt and pepper to taste
- For garnish: chopped tomatoes, onions, parsley, olive oil
Instructions
- 1In a pot, add the fava beans with enough water to cover them.
- 2Bring to a boil, then reduce heat and simmer for 10 minutes.
- 3Mash some of the beans with a fork or potato masher, leaving some whole for texture.
- 4Add garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper.
- 5Simmer for another 5 minutes, stirring occasionally.
- 6Serve hot, garnished with chopped tomatoes, onions, parsley, and a drizzle of olive oil.
- 7Enjoy with warm pita bread.
