Description

A hearty fava bean dish that's high in protein and fiber, perfect for Suhoor to keep you full throughout the day.

Ingredients

  • 2 cans (400g each) fava beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • For garnish: chopped tomatoes, onions, parsley, olive oil

Instructions

    In a pot, add the fava beans with enough water to cover them.

    Bring to a boil, then reduce heat and simmer for 10 minutes.

    Mash some of the beans with a fork or potato masher, leaving some whole for texture.

    Add garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper.

    Simmer for another 5 minutes, stirring occasionally.

    Serve hot, garnished with chopped tomatoes, onions, parsley, and a drizzle of olive oil.
