Description

A rich and creamy vermicelli pudding with dates and nuts, traditionally served during Eid but also perfect for Iftar.

Ingredients

  • 1 cup vermicelli, broken into small pieces
  • 2 tbsp ghee
  • 1/4 cup mixed nuts (almonds, pistachios, cashews)
  • 10 dates, pitted and chopped
  • 4 cups milk
  • 1/2 cup sugar or to taste
  • 1/4 tsp cardamom powder
  • Pinch of saffron strands (optional)
  • 2 tbsp rose water (optional)

Instructions

    Heat ghee in a pan, add vermicelli and roast until golden brown.

    Add chopped nuts and dates, sauté for 2 minutes.

    Pour in the milk and bring to a boil.

    Add sugar, cardamom powder, and saffron if using.

    Reduce heat and simmer for 15-20 minutes until the vermicelli is cooked and the pudding thickens.

    Stir in rose water if using.

    Serve warm or chilled, garnished with additional nuts.
