Description

Crispy fritters made with assorted vegetables and chickpea flour, a popular Iftar snack.

Ingredients

  • 1 cup chickpea flour (besan)
  • 1 onion, thinly sliced
  • 1 potato, thinly sliced
  • 1 bell pepper, julienned
  • 1 cup spinach, chopped
  • 2 green chilies, finely chopped
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/4 tsp baking soda
  • Salt to taste
  • Water as needed
  • Oil for deep frying

Instructions

    In a large bowl, mix chickpea flour, spices, baking soda, and salt.

    Add water gradually to make a thick batter.

    Add all the vegetables and mix well to coat them with the batter.

    Heat oil in a deep pan for frying.

    Drop spoonfuls of the vegetable mixture into the hot oil.

    Fry until golden brown and crispy on all sides.

    Remove and drain on paper towels.

    Serve hot with mint chutney or tamarind sauce.
