Description

Crispy and flavorful chickpea fritters with spinach, perfect for a light yet satisfying Iftar snack.

Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup chickpea flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp olive oil for frying

Instructions

    In a bowl, mash the chickpeas until slightly chunky.

    Add spinach, chickpea flour, onion, garlic, cumin, coriander, salt, pepper, and lemon juice. Mix well.

    Shape the mixture into small patties.

    Heat olive oil in a pan over medium heat.

    Fry the fritters for 3-4 minutes on each side until golden brown and crispy.
