Description
Crispy and flavorful chickpea fritters with spinach, perfect for a light yet satisfying Iftar snack.
Ingredients
- 1 cup canned chickpeas, drained and rinsed
- 1/2 cup fresh spinach, chopped
- 1/4 cup chickpea flour
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
- 2 tbsp olive oil for frying
Instructions
- 1In a bowl, mash the chickpeas until slightly chunky.
- 2Add spinach, chickpea flour, onion, garlic, cumin, coriander, salt, pepper, and lemon juice. Mix well.
- 3Shape the mixture into small patties.
- 4Heat olive oil in a pan over medium heat.
- 5Fry the fritters for 3-4 minutes on each side until golden brown and crispy.
- 6Drain on paper towels and serve warm with a side of tahini sauce or yogurt dip.
