Description
Sweet coconut sticky rice with fresh mango, a delightful Southeast Asian dessert for Iftar.
Ingredients
- 1 cup sticky rice (glutinous rice), soaked overnight
- 1 1/2 cups coconut milk, divided
- 1/4 cup sugar
- 1/2 tsp salt
- 2 ripe mangoes, peeled and sliced
- 1 tbsp toasted sesame seeds or mung beans (optional)
- Fresh mint leaves for garnish
Instructions
- 1Drain the soaked sticky rice.
- 2Steam the rice for 20-25 minutes until tender.
- 3Meanwhile, in a saucepan, heat 1 cup coconut milk with sugar and salt until sugar dissolves. Do not boil.
- 4When rice is cooked, transfer to a bowl and pour the warm coconut milk mixture over it.
- 5Stir gently, cover, and let sit for 30 minutes to absorb the liquid.
- 6In a small saucepan, warm the remaining 1/2 cup coconut milk until just hot. This will be the sauce.
- 7To serve, place a portion of sticky rice on a plate, arrange mango slices alongside.
- 8Drizzle with the warm coconut sauce.
- 9Sprinkle with toasted sesame seeds or mung beans if using.
- 10Garnish with mint leaves.
