Mango Sticky Rice

Description

Sweet coconut sticky rice with fresh mango, a delightful Southeast Asian dessert for Iftar.

Ingredients

  • 1 cup sticky rice (glutinous rice), soaked overnight
  • 1 1/2 cups coconut milk, divided
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 2 ripe mangoes, peeled and sliced
  • 1 tbsp toasted sesame seeds or mung beans (optional)
  • Fresh mint leaves for garnish

Instructions

    Drain the soaked sticky rice.

    Steam the rice for 20-25 minutes until tender.

    Meanwhile, in a saucepan, heat 1 cup coconut milk with sugar and salt until sugar dissolves. Do not boil.

    When rice is cooked, transfer to a bowl and pour the warm coconut milk mixture over it.

    Stir gently, cover, and let sit for 30 minutes to absorb the liquid.

    In a small saucepan, warm the remaining 1/2 cup coconut milk until just hot. This will be the sauce.

    To serve, place a portion of sticky rice on a plate, arrange mango slices alongside.

    Drizzle with the warm coconut sauce.
