Description

Boat-shaped flatbread topped with cheese and herbs, a delicious Iftar option.

Ingredients

  • For the dough:
  • 3 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup warm water
  • 2 tbsp olive oil
  • For the filling:
  • 2 cups cheese (mix of feta and mozzarella), crumbled
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 egg, beaten (for egg wash)
  • 2 tbsp butter, melted
  • Black sesame seeds for sprinkling

Instructions

    In a large bowl, mix flour, yeast, sugar, and salt.

    Add warm water and olive oil, mix until a dough forms.

    Knead for 5-7 minutes until smooth and elastic.

    Cover and let rise in a warm place for 1 hour until doubled in size.

    Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.

    In a bowl, mix cheeses with herbs.

    Divide the dough into 4 equal pieces.

    Roll each piece into an oval shape, about 1/4 inch thick.

    Spread cheese mixture in the center, leaving a border.

    Fold the edges over slightly and pinch the ends to form a boat shape.

    Brush the edges with beaten egg and sprinkle with black sesame seeds.
