Bamya (Okra Stew)

Description

A rich and flavorful okra stew with meat and tomatoes, popular during Ramadan.

Ingredients

  • 500g beef or lamb, cubed
  • 500g fresh or frozen okra, trimmed
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tomatoes, chopped
  • 2 tbsp vegetable oil
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper (optional)
  • 2 cups beef or vegetable broth
  • 2 tbsp lemon juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Rice for serving

Instructions

    Heat oil in a large pot over medium heat.

    Add onions and sauté until translucent.

    Add garlic and cook for 1 minute until fragrant.

    Add meat and brown on all sides.

    Stir in tomato paste and spices, cook for 2 minutes.

    Add chopped tomatoes and cook for 5 minutes until they break down.

    Add okra and stir gently to combine.

    Pour in broth, bring to a boil, then reduce heat.

    Cover and simmer for 45 minutes until meat is tender and okra is cooked.

    Stir in lemon juice and adjust seasoning.
