Bamya (Okra Stew)

Description
A rich and flavorful okra stew with meat and tomatoes, popular during Ramadan.
Ingredients
- 500g beef or lamb, cubed
- 500g fresh or frozen okra, trimmed
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tomatoes, chopped
- 2 tbsp vegetable oil
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper (optional)
- 2 cups beef or vegetable broth
- 2 tbsp lemon juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Rice for serving
Instructions
- 1Heat oil in a large pot over medium heat.
- 2Add onions and sauté until translucent.
- 3Add garlic and cook for 1 minute until fragrant.
- 4Add meat and brown on all sides.
- 5Stir in tomato paste and spices, cook for 2 minutes.
- 6Add chopped tomatoes and cook for 5 minutes until they break down.
- 7Add okra and stir gently to combine.
- 8Pour in broth, bring to a boil, then reduce heat.
- 9Cover and simmer for 45 minutes until meat is tender and okra is cooked.
- 10Stir in lemon juice and adjust seasoning.
- 11Garnish with fresh cilantro.
- 12Serve hot over rice.
