Somali Rice (Bariis Iskukaris)

Description
Fragrant spiced rice with vegetables and meat, a staple Somali dish perfect for Iftar.
Ingredients
- 2 cups basmati rice, rinsed and soaked for 20 minutes
- 500g beef or lamb, cubed
- 2 onions, finely chopped
- 2 carrots, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 cinnamon stick
- 3 cardamom pods, crushed
- 3 cloves
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground black pepper
- 1/4 tsp ground turmeric
- 2 tbsp tomato paste
- 3 cups beef or vegetable broth
- 2 tbsp olive oil
- Salt to taste
- 1/4 cup raisins (optional)
- 1/4 cup fresh cilantro, chopped
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add onions and sauté until translucent.
- 3Add meat and brown on all sides.
- 4Add garlic, ginger, and all the spices. Cook for 2 minutes until fragrant.
- 5Stir in tomato paste and mix well.
- 6Add carrots and bell pepper, cook for 5 minutes.
- 7Drain the soaked rice and add to the pot. Stir to coat with the spices.
- 8Pour in the broth, add salt, and bring to a boil.
- 9If using raisins, add them now.
- 10Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
- 11Let rest for 10 minutes with the lid on.
- 12Fluff the rice with a fork and garnish with fresh cilantro.
- 13Serve hot.
