Somali Rice (Bariis Iskukaris)

Description

Fragrant spiced rice with vegetables and meat, a staple Somali dish perfect for Iftar.

Ingredients

  • 2 cups basmati rice, rinsed and soaked for 20 minutes
  • 500g beef or lamb, cubed
  • 2 onions, finely chopped
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 cinnamon stick
  • 3 cardamom pods, crushed
  • 3 cloves
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground turmeric
  • 2 tbsp tomato paste
  • 3 cups beef or vegetable broth
  • 2 tbsp olive oil
  • Salt to taste
  • 1/4 cup raisins (optional)
  • 1/4 cup fresh cilantro, chopped

Instructions

    Heat olive oil in a large pot over medium heat.

    Add onions and sauté until translucent.

    Add meat and brown on all sides.

    Add garlic, ginger, and all the spices. Cook for 2 minutes until fragrant.

    Stir in tomato paste and mix well.

    Add carrots and bell pepper, cook for 5 minutes.

    Drain the soaked rice and add to the pot. Stir to coat with the spices.

    Pour in the broth, add salt, and bring to a boil.

    If using raisins, add them now.

    Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.

    Let rest for 10 minutes with the lid on.

    Fluff the rice with a fork and garnish with fresh cilantro.
