Ful Medames with Eggs

Description

A hearty breakfast of fava beans topped with boiled eggs, perfect for Suhoor.

Ingredients

  • 2 cans (400g each) fava beans, drained
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 eggs, boiled and halved
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red onion, finely diced
  • Pita bread for serving

Instructions

    In a pot, warm the fava beans over medium heat.

    Mash some of the beans with a fork, leaving others whole for texture.

    Add garlic, half the olive oil, lemon juice, cumin, and paprika. Stir well.

    Season with salt and pepper to taste.

    Simmer for 5-7 minutes, stirring occasionally.

    Transfer to serving bowls.

    Top with boiled egg halves, tomatoes, cucumber, red onion, and parsley.
