Description
A hearty breakfast of fava beans topped with boiled eggs, perfect for Suhoor.
Ingredients
- 2 cans (400g each) fava beans, drained
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 eggs, boiled and halved
- 1 tomato, diced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup red onion, finely diced
- Pita bread for serving
Instructions
- 1In a pot, warm the fava beans over medium heat.
- 2Mash some of the beans with a fork, leaving others whole for texture.
- 3Add garlic, half the olive oil, lemon juice, cumin, and paprika. Stir well.
- 4Season with salt and pepper to taste.
- 5Simmer for 5-7 minutes, stirring occasionally.
- 6Transfer to serving bowls.
- 7Top with boiled egg halves, tomatoes, cucumber, red onion, and parsley.
- 8Drizzle with remaining olive oil.
- 9Serve hot with warm pita bread.
