Falafel Wrap

Description
Crispy chickpea patties wrapped in flatbread with tahini sauce and fresh vegetables.
Ingredients
- For the falafel:
- 2 cups dried chickpeas, soaked overnight (do not use canned)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- 1 tsp baking powder
- Salt and pepper to taste
- Oil for frying
- For the wrap:
- 4 large flatbreads or pita
- 1/2 cup tahini sauce
- 1 cucumber, sliced
- 2 tomatoes, sliced
- 1 cup lettuce, shredded
- 1/4 cup pickles, sliced
- 1/4 cup fresh mint leaves
Instructions
- 1Drain soaked chickpeas and pat dry.
- 2In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, coriander, cumin, salt, and pepper.
- 3Pulse until the mixture is finely chopped but not pureed.
- 4Transfer to a bowl, add baking powder, and mix well.
- 5Cover and refrigerate for 1 hour.
- 6Shape the mixture into small patties or balls.
- 7Heat oil in a deep pan for frying.
- 8Fry falafel in batches until golden brown and crispy, about 3-4 minutes.
- 9Drain on paper towels.
- 10To assemble the wrap, spread tahini sauce on the flatbread.
- 11Add lettuce, tomatoes, cucumber, pickles, and mint leaves.
- 12Place 3-4 falafel patties on top.
- 13Roll up tightly and serve immediately.
