Falafel Wrap

Description

Crispy chickpea patties wrapped in flatbread with tahini sauce and fresh vegetables.

Ingredients

  • For the falafel:
  • 2 cups dried chickpeas, soaked overnight (do not use canned)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Oil for frying
  • For the wrap:
  • 4 large flatbreads or pita
  • 1/2 cup tahini sauce
  • 1 cucumber, sliced
  • 2 tomatoes, sliced
  • 1 cup lettuce, shredded
  • 1/4 cup pickles, sliced
  • 1/4 cup fresh mint leaves

Instructions

    Drain soaked chickpeas and pat dry.

    In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, coriander, cumin, salt, and pepper.

    Pulse until the mixture is finely chopped but not pureed.

    Transfer to a bowl, add baking powder, and mix well.

    Cover and refrigerate for 1 hour.

    Shape the mixture into small patties or balls.

    Heat oil in a deep pan for frying.

    Fry falafel in batches until golden brown and crispy, about 3-4 minutes.

    Drain on paper towels.

    To assemble the wrap, spread tahini sauce on the flatbread.

    Add lettuce, tomatoes, cucumber, pickles, and mint leaves.

    Place 3-4 falafel patties on top.
