Description

Roasted chicken served on taboon bread with caramelized onions and sumac, a Palestinian favorite.

Ingredients

  • 1 whole chicken, cut into pieces
  • 4 large onions, thinly sliced
  • 1/2 cup olive oil
  • 3 tbsp sumac
  • 1 tsp ground cumin
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 4 flatbreads (taboon or naan bread)
  • 1/4 cup pine nuts, toasted
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

    Preheat oven to 200°C (400°F).

    Season chicken pieces with salt, pepper, and 1 tbsp sumac. Set aside.

    Heat 1/4 cup olive oil in a large skillet over medium heat.

    Add sliced onions and cook until golden and caramelized, about 20 minutes.

    Stir in remaining sumac, cumin, allspice, cardamom, and cinnamon. Season with salt and pepper.

    In another pan, heat remaining olive oil and brown chicken pieces on all sides.

    Place flatbreads on a baking sheet, spread caramelized onions over them.

    Arrange chicken pieces on top.

    Bake for 25-30 minutes until chicken is cooked through and bread is crisp around the edges.

    Sprinkle with toasted pine nuts and fresh parsley before serving.
