Description
Roasted chicken served on taboon bread with caramelized onions and sumac, a Palestinian favorite.
Ingredients
- 1 whole chicken, cut into pieces
- 4 large onions, thinly sliced
- 1/2 cup olive oil
- 3 tbsp sumac
- 1 tsp ground cumin
- 1/2 tsp ground allspice
- 1/4 tsp ground cardamom
- 1/4 tsp ground cinnamon
- 4 flatbreads (taboon or naan bread)
- 1/4 cup pine nuts, toasted
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- 1Preheat oven to 200°C (400°F).
- 2Season chicken pieces with salt, pepper, and 1 tbsp sumac. Set aside.
- 3Heat 1/4 cup olive oil in a large skillet over medium heat.
- 4Add sliced onions and cook until golden and caramelized, about 20 minutes.
- 5Stir in remaining sumac, cumin, allspice, cardamom, and cinnamon. Season with salt and pepper.
- 6In another pan, heat remaining olive oil and brown chicken pieces on all sides.
- 7Place flatbreads on a baking sheet, spread caramelized onions over them.
- 8Arrange chicken pieces on top.
- 9Bake for 25-30 minutes until chicken is cooked through and bread is crisp around the edges.
- 10Sprinkle with toasted pine nuts and fresh parsley before serving.
