Moroccan Vegetable Tajine

Description
A flavorful stew of vegetables and chickpeas in aromatic spices, cooked in a traditional tajine pot.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 2 carrots, sliced
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 1 sweet potato, diced
- 1 can (400g) chickpeas, drained and rinsed
- 1/2 cup dried apricots, chopped
- 1/4 cup green olives
- 2 cups vegetable broth
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Couscous for serving
Instructions
- 1Heat olive oil in a tajine or large pot over medium heat.
- 2Add onion and garlic, sauté until softened.
- 3Add all the spices and cook for 1 minute until fragrant.
- 4Add carrots, zucchini, bell pepper, tomatoes, sweet potato, and chickpeas. Stir to coat with spices.
- 5Add dried apricots, olives, and vegetable broth. Bring to a simmer.
- 6Cover and cook on low heat for 35-40 minutes until vegetables are tender.
- 7Stir in fresh cilantro and parsley.
- 8Season with salt and pepper to taste.
- 9Serve hot over couscous.
