Moroccan Vegetable Tajine

Description

A flavorful stew of vegetables and chickpeas in aromatic spices, cooked in a traditional tajine pot.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 2 carrots, sliced
  • 2 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 sweet potato, diced
  • 1 can (400g) chickpeas, drained and rinsed
  • 1/2 cup dried apricots, chopped
  • 1/4 cup green olives
  • 2 cups vegetable broth
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Couscous for serving

Instructions

    Heat olive oil in a tajine or large pot over medium heat.

    Add onion and garlic, sauté until softened.

    Add all the spices and cook for 1 minute until fragrant.

    Add carrots, zucchini, bell pepper, tomatoes, sweet potato, and chickpeas. Stir to coat with spices.

    Add dried apricots, olives, and vegetable broth. Bring to a simmer.

    Cover and cook on low heat for 35-40 minutes until vegetables are tender.

    Stir in fresh cilantro and parsley.

    Season with salt and pepper to taste.
