Roasted Red Pepper Hummus

Description

Creamy chickpea dip with sweet roasted red peppers, perfect with bread for Suhoor.

Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 2 roasted red bell peppers (from jar or freshly roasted)
  • 3 tbsp tahini
  • 3 tbsp lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp olive oil, plus more for drizzling
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika, plus more for garnish
  • Salt to taste
  • 2 tbsp pine nuts, toasted (optional)
  • Fresh parsley for garnish
  • Pita bread or vegetable sticks for serving

Instructions

    In a food processor, combine chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, cumin, and smoked paprika.

    Process until smooth and creamy. If too thick, add a little water.

    Season with salt to taste.

    Transfer to a serving bowl.

    Drizzle with olive oil and sprinkle with smoked paprika.

    Garnish with toasted pine nuts and fresh parsley if desired.
