Roasted Red Pepper Hummus

Description
Creamy chickpea dip with sweet roasted red peppers, perfect with bread for Suhoor.
Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 2 roasted red bell peppers (from jar or freshly roasted)
- 3 tbsp tahini
- 3 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tbsp olive oil, plus more for drizzling
- 1 tsp ground cumin
- 1/2 tsp smoked paprika, plus more for garnish
- Salt to taste
- 2 tbsp pine nuts, toasted (optional)
- Fresh parsley for garnish
- Pita bread or vegetable sticks for serving
Instructions
- 1In a food processor, combine chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, cumin, and smoked paprika.
- 2Process until smooth and creamy. If too thick, add a little water.
- 3Season with salt to taste.
- 4Transfer to a serving bowl.
- 5Drizzle with olive oil and sprinkle with smoked paprika.
- 6Garnish with toasted pine nuts and fresh parsley if desired.
- 7Serve with warm pita bread or vegetable sticks.
