Sweet Vermicelli (Sewaiyan)

Description

A creamy milk-based dessert with roasted vermicelli, nuts, and cardamom.

Ingredients

  • 200g thin vermicelli noodles, broken into small pieces
  • 3 tbsp ghee or butter
  • 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 tsp cardamom powder
  • Pinch of saffron strands, soaked in 1 tbsp warm milk (optional)
  • 2 tbsp rose water (optional)
  • 2 tbsp dried fruit (raisins, dates), chopped

Instructions

    Heat ghee in a large pan over medium heat.

    Add vermicelli and roast until golden brown, stirring constantly.

    Add nuts and roast for another minute.

    Pour in the milk and bring to a boil.

    Reduce heat and simmer for 10-15 minutes until vermicelli is soft and milk has reduced slightly.

    Add sugar, cardamom powder, and saffron (if using). Stir well.

    Cook for another 5 minutes until sugar dissolves and mixture thickens slightly.

    Remove from heat and stir in rose water (if using) and dried fruit.

    Serve warm or chilled, garnished with additional nuts.
