Sweet Vermicelli (Sewaiyan)

Description
A creamy milk-based dessert with roasted vermicelli, nuts, and cardamom.
Ingredients
- 200g thin vermicelli noodles, broken into small pieces
- 3 tbsp ghee or butter
- 1/4 cup mixed nuts (almonds, pistachios, cashews), chopped
- 4 cups milk
- 1/2 cup sugar
- 1/4 tsp cardamom powder
- Pinch of saffron strands, soaked in 1 tbsp warm milk (optional)
- 2 tbsp rose water (optional)
- 2 tbsp dried fruit (raisins, dates), chopped
Instructions
- 1Heat ghee in a large pan over medium heat.
- 2Add vermicelli and roast until golden brown, stirring constantly.
- 3Add nuts and roast for another minute.
- 4Pour in the milk and bring to a boil.
- 5Reduce heat and simmer for 10-15 minutes until vermicelli is soft and milk has reduced slightly.
- 6Add sugar, cardamom powder, and saffron (if using). Stir well.
- 7Cook for another 5 minutes until sugar dissolves and mixture thickens slightly.
- 8Remove from heat and stir in rose water (if using) and dried fruit.
- 9Serve warm or chilled, garnished with additional nuts.
