Description

A refreshing parsley and bulgur salad with tomatoes, mint, and a lemony dressing.

Ingredients

  • 1/4 cup fine bulgur wheat
  • 4 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 4 spring onions, finely sliced
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 tsp ground allspice
  • Salt and pepper to taste
  • Romaine lettuce leaves for serving

Instructions

    Rinse the bulgur wheat, then soak in cold water for 20 minutes until softened. Drain well.

    In a large bowl, combine parsley, mint, spring onions, tomatoes, and cucumber.
