Description
A refreshing parsley and bulgur salad with tomatoes, mint, and a lemony dressing.
Ingredients
- 1/4 cup fine bulgur wheat
- 4 cups fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 4 spring onions, finely sliced
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 tsp ground allspice
- Salt and pepper to taste
- Romaine lettuce leaves for serving
Instructions
- 1Rinse the bulgur wheat, then soak in cold water for 20 minutes until softened. Drain well.
- 2In a large bowl, combine parsley, mint, spring onions, tomatoes, and cucumber.
- 3Add the drained bulgur and mix well.
- 4In a small bowl, whisk together olive oil, lemon juice, allspice, salt, and pepper.
- 5Pour the dressing over the salad and toss gently to combine.
- 6Let the salad sit for at least 30 minutes for the flavors to meld.
- 7Serve on romaine lettuce leaves.
