Description

Sweet pancakes filled with nuts or cheese, a traditional Ramadan dessert.

Ingredients

  • For the batter:
  • 1 cup all-purpose flour
  • 1/4 cup semolina
  • 1 tbsp sugar
  • 1/2 tsp instant yeast
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups warm water
  • For the nut filling:
  • 1 cup mixed nuts (walnuts, pistachios, almonds), finely chopped
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 tbsp rose water
  • For the sugar syrup:
  • 1 cup sugar
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 1 tsp rose water or orange blossom water

Instructions

  1. 1
In a bowl, whisk together flour, semolina, sugar, yeast, baking powder, and salt.
  2. 2
Gradually add warm water while whisking until smooth. Let the batter rest for 30 minutes.
  3. 3
Meanwhile, prepare the filling by mixing all nut filling ingredients together.
  4. 4
Make the sugar syrup by combining sugar and water in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. 5
Stir in lemon juice and rose water. Let cool.
  6. 6
Heat a non-stick pan over medium heat.
  7. 7
Pour small circles of batter (about 3 inches) onto the pan.
  8. 8
Cook only one side until bubbles form on the surface and the edges are dry (about 1 minute).
  9. 9
Remove from heat. The uncooked side will be the inside of the qatayef.
  10. 10
Place 1 tablespoon of filling in the center of each pancake.
  11. 11
Fold in half and pinch the edges to seal.
  12. 12
Either serve as is or deep fry until golden brown.
  13. 13
Drizzle with sugar syrup before serving.
