Qatayef (Arabic Pancakes)

Description
Sweet pancakes filled with nuts or cheese, a traditional Ramadan dessert.
Ingredients
- For the batter:
- 1 cup all-purpose flour
- 1/4 cup semolina
- 1 tbsp sugar
- 1/2 tsp instant yeast
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 1/4 cups warm water
- For the nut filling:
- 1 cup mixed nuts (walnuts, pistachios, almonds), finely chopped
- 2 tbsp sugar
- 1 tsp cinnamon
- 1 tbsp rose water
- For the sugar syrup:
- 1 cup sugar
- 1/2 cup water
- 1 tbsp lemon juice
- 1 tsp rose water or orange blossom water
Instructions
- 1In a bowl, whisk together flour, semolina, sugar, yeast, baking powder, and salt.
- 2Gradually add warm water while whisking until smooth. Let the batter rest for 30 minutes.
- 3Meanwhile, prepare the filling by mixing all nut filling ingredients together.
- 4Make the sugar syrup by combining sugar and water in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
- 5Stir in lemon juice and rose water. Let cool.
- 6Heat a non-stick pan over medium heat.
- 7Pour small circles of batter (about 3 inches) onto the pan.
- 8Cook only one side until bubbles form on the surface and the edges are dry (about 1 minute).
- 9Remove from heat. The uncooked side will be the inside of the qatayef.
- 10Place 1 tablespoon of filling in the center of each pancake.
- 11Fold in half and pinch the edges to seal.
- 12Either serve as is or deep fry until golden brown.
- 13Drizzle with sugar syrup before serving.
