Description
No-bake energy balls packed with dates, nuts, and seeds for a quick energy boost.
Ingredients
- 1 cup Medjool dates, pitted
- 1/2 cup almonds
- 1/2 cup walnuts
- 2 tbsp chia seeds
- 2 tbsp flaxseeds, ground
- 2 tbsp cocoa powder
- 1 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- Pinch of salt
- Shredded coconut for rolling (optional)
Instructions
- 1Place almonds and walnuts in a food processor. Pulse until coarsely chopped.
- 2Add dates, chia seeds, flaxseeds, cocoa powder, honey, vanilla, cinnamon, and salt.
- 3Process until the mixture sticks together when pressed.
- 4Roll the mixture into 1-inch balls.
- 5If desired, roll the balls in shredded coconut to coat.
- 6Store in an airtight container in the refrigerator for up to 2 weeks.
