Freekeh Soup with Chicken

Description
A hearty soup made with cracked green wheat and tender chicken pieces.
Ingredients
- 1 cup freekeh, washed and drained
- 500g chicken pieces, with bone
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1/2 tsp ground allspice
- 2 bay leaves
- 8 cups chicken broth
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1 lemon, cut into wedges
- Salt and pepper to taste
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add onion, carrots, and celery. Sauté for 5 minutes until softened.
- 3Add garlic and spices, cook for 1 minute until fragrant.
- 4Add chicken pieces and brown lightly on all sides.
- 5Add freekeh and stir to coat with the spices.
- 6Pour in chicken broth and add bay leaves. Bring to a boil.
- 7Reduce heat, cover, and simmer for 40-45 minutes until freekeh and chicken are tender.
- 8Remove chicken pieces, shred the meat, and return to the soup.
- 9Season with salt and pepper.
- 10Serve hot, garnished with parsley and a lemon wedge on the side.
