Freekeh Soup with Chicken

Description

A hearty soup made with cracked green wheat and tender chicken pieces.

Ingredients

  • 1 cup freekeh, washed and drained
  • 500g chicken pieces, with bone
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp ground allspice
  • 2 bay leaves
  • 8 cups chicken broth
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, cut into wedges
  • Salt and pepper to taste

Instructions

    Heat olive oil in a large pot over medium heat.

    Add onion, carrots, and celery. Sauté for 5 minutes until softened.

    Add garlic and spices, cook for 1 minute until fragrant.

    Add chicken pieces and brown lightly on all sides.

    Add freekeh and stir to coat with the spices.

    Pour in chicken broth and add bay leaves. Bring to a boil.

    Reduce heat, cover, and simmer for 40-45 minutes until freekeh and chicken are tender.

    Remove chicken pieces, shred the meat, and return to the soup.

    Season with salt and pepper.

    Serve hot, garnished with parsley and a lemon wedge on the side.
