Sahlab (Middle Eastern Milk Pudding)

Description

A warm, comforting milk-based drink thickened with sahlab powder, perfect for Suhoor.

Ingredients

  • 4 cups milk
  • 3 tbsp sahlab powder (or 2 tbsp cornstarch + 1 tbsp rice flour)
  • 3 tbsp sugar
  • 1 tsp rose water or orange blossom water
  • 1/2 tsp ground cinnamon
  • 2 tbsp shredded coconut
  • 2 tbsp pistachios, chopped
  • 2 tbsp raisins

Instructions

    In a small bowl, mix sahlab powder with 1/4 cup of the milk to form a smooth paste.

    In a saucepan, bring the remaining milk and sugar to a simmer over medium heat.

    Whisk in the sahlab paste and stir continuously until thickened, about 5-7 minutes.

    Remove from heat and stir in rose water or orange blossom water.

    Pour into serving cups and sprinkle with cinnamon, coconut, pistachios, and raisins.
