Description
A hearty Turkish red lentil soup that's nutritious and filling, perfect for breaking the fast.
Ingredients
- 1 cup red lentils, washed and drained
- 1 onion, finely chopped
- 1 carrot, diced
- 1 potato, diced
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika
- 6 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- 1Heat olive oil in a pot, add onions and sauté until translucent.
- 2Add carrots and potatoes, cook for 5 minutes.
- 3Stir in tomato paste and spices, cook for 1 minute.
- 4Add lentils and vegetable broth, bring to a boil.
- 5Reduce heat, cover, and simmer for 30 minutes until lentils are soft.
- 6Blend the soup until smooth using an immersion blender.
- 7Season with salt and pepper.
- 8Serve hot with lemon wedges.
