Molokhia (Jute Leaf Soup)

Description

A traditional Egyptian soup made with jute leaves and chicken, rich in nutrients.

Ingredients

  • 500g chicken pieces
  • 2 cups frozen molokhia leaves (or 4 cups fresh, finely chopped)
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 tbsp coriander, ground
  • 1 tsp cumin, ground
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp butter or ghee
  • 2 tbsp olive oil
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Rice for serving

Instructions

    In a large pot, bring chicken broth to a boil with onion and bay leaves.

    Add chicken pieces and simmer for 30 minutes until chicken is cooked through.

    Remove chicken, set aside. Strain the broth and return to the pot.

    Add molokhia leaves to the broth, bring to a simmer.

    In a small pan, heat butter and olive oil. Add garlic and coriander, cook until fragrant.

    Pour the garlic mixture into the molokhia soup and stir well.

    Add cumin, salt, and pepper. Simmer for 15 minutes.

    Shred the chicken and return it to the soup.

    Stir in lemon juice and cilantro just before serving.

    Serve hot over rice.
