Molokhia (Jute Leaf Soup)

Description
A traditional Egyptian soup made with jute leaves and chicken, rich in nutrients.
Ingredients
- 500g chicken pieces
- 2 cups frozen molokhia leaves (or 4 cups fresh, finely chopped)
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 tbsp coriander, ground
- 1 tsp cumin, ground
- 1/4 cup fresh cilantro, chopped
- 2 tbsp butter or ghee
- 2 tbsp olive oil
- 8 cups chicken broth
- 2 bay leaves
- 1 lemon, juiced
- Salt and pepper to taste
- Rice for serving
Instructions
- 1In a large pot, bring chicken broth to a boil with onion and bay leaves.
- 2Add chicken pieces and simmer for 30 minutes until chicken is cooked through.
- 3Remove chicken, set aside. Strain the broth and return to the pot.
- 4Add molokhia leaves to the broth, bring to a simmer.
- 5In a small pan, heat butter and olive oil. Add garlic and coriander, cook until fragrant.
- 6Pour the garlic mixture into the molokhia soup and stir well.
- 7Add cumin, salt, and pepper. Simmer for 15 minutes.
- 8Shred the chicken and return it to the soup.
- 9Stir in lemon juice and cilantro just before serving.
- 10Serve hot over rice.
