Bell peppers stuffed with quinoa, vegetables, and spices, a nutritious Iftar option.
Ingredients
- 4 bell peppers (any color), tops removed and seeded
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 can (400g) diced tomatoes
- 1 can (400g) black beans, drained and rinsed
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup grated cheese (optional, omit for vegan)
Instructions
- 1Preheat oven to 190°C (375°F).
- 2Cook quinoa in vegetable broth according to package instructions.
- 3In a large skillet, heat olive oil. Add onion and garlic, sauté until softened.
- 4Add zucchini and cook for 3-4 minutes.
- 5Stir in diced tomatoes, black beans, and spices. Simmer for 5 minutes.
- 6Mix in cooked quinoa and cilantro. Season with salt and pepper.
- 7Stand the bell peppers in a baking dish. Fill them with the quinoa mixture.
- 8Cover with foil and bake for 30 minutes.
- 9If using cheese, remove foil, sprinkle cheese on top, and bake for another 5 minutes until cheese melts.
- 10Serve hot, garnished with additional cilantro if desired.
