Ingredients

  • 4 bell peppers (any color), tops removed and seeded
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) black beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup grated cheese (optional, omit for vegan)

Instructions

    Preheat oven to 190°C (375°F).

    Cook quinoa in vegetable broth according to package instructions.

    In a large skillet, heat olive oil. Add onion and garlic, sauté until softened.

    Add zucchini and cook for 3-4 minutes.

    Stir in diced tomatoes, black beans, and spices. Simmer for 5 minutes.

    Mix in cooked quinoa and cilantro. Season with salt and pepper.

    Stand the bell peppers in a baking dish. Fill them with the quinoa mixture.

    Cover with foil and bake for 30 minutes.

    If using cheese, remove foil, sprinkle cheese on top, and bake for another 5 minutes until cheese melts.
