Fattoush Salad

Description

A refreshing Levantine bread salad with mixed vegetables and a tangy dressing.

Ingredients

  • 2 pita breads, torn into bite-sized pieces
  • 3 tbsp olive oil
  • 2 cups romaine lettuce, chopped
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red bell pepper, diced
  • 4 radishes, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • For the dressing:
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp pomegranate molasses
  • 2 cloves garlic, minced
  • 1 tsp sumac
  • Salt and pepper to taste

Instructions

    Preheat oven to 180°C (350°F).

    Toss pita pieces with olive oil and spread on a baking sheet.

    Bake for 10-12 minutes until golden and crisp. Let cool.

    In a large bowl, combine all vegetables and herbs.

    In a small bowl, whisk together all dressing ingredients.

    Just before serving, add toasted pita pieces to the salad.

    Drizzle with dressing and toss gently to combine.

    Sprinkle with additional sumac if desired.
