Fattoush Salad

Description
A refreshing Levantine bread salad with mixed vegetables and a tangy dressing.
Ingredients
- 2 pita breads, torn into bite-sized pieces
- 3 tbsp olive oil
- 2 cups romaine lettuce, chopped
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red bell pepper, diced
- 4 radishes, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- For the dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp pomegranate molasses
- 2 cloves garlic, minced
- 1 tsp sumac
- Salt and pepper to taste
Instructions
- 1Preheat oven to 180°C (350°F).
- 2Toss pita pieces with olive oil and spread on a baking sheet.
- 3Bake for 10-12 minutes until golden and crisp. Let cool.
- 4In a large bowl, combine all vegetables and herbs.
- 5In a small bowl, whisk together all dressing ingredients.
- 6Just before serving, add toasted pita pieces to the salad.
- 7Drizzle with dressing and toss gently to combine.
- 8Sprinkle with additional sumac if desired.
