Description
A hearty and nutritious stew perfect for Iftar, packed with protein and fiber.
Ingredients
- 1 cup green or brown lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper (optional)
- 1 bay leaf
- Fresh parsley or cilantro for garnish
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add onion, carrots, celery, and bell pepper. Sauté for 5 minutes.
- 3Add garlic and spices. Cook for 1 minute until fragrant.
- 4Add lentils, diced tomatoes, vegetable broth, and bay leaf.
- 5Bring to a boil, then reduce heat and simmer for 30-35 minutes until lentils are tender.
- 6Remove bay leaf and season with salt and pepper.
- 7Garnish with fresh herbs and serve with lemon wedges.
