A creamy, nutritious pudding that can be prepared ahead for Suhoor.
Ingredients
- 1/4 cup chia seeds
- 1 can (400ml) coconut milk
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
- Toppings: fresh fruits, nuts, seeds, or granola
Instructions
- 1In a bowl, whisk together coconut milk, honey, vanilla, and salt.
- 2Stir in chia seeds until well combined.
- 3Cover and refrigerate overnight or for at least 4 hours.
- 4Stir well before serving.
- 5Top with fresh fruits, nuts, seeds, or granola.
