Spinach and Feta Borek

Description
Flaky pastry filled with spinach and feta cheese, a delicious Iftar snack.
Ingredients
- 1 package phyllo dough, thawed
- 500g spinach, washed and chopped
- 200g feta cheese, crumbled
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup olive oil
- Salt and pepper to taste
- Sesame seeds for topping
Instructions
- 1Preheat oven to 180°C (350°F).
- 2Heat 2 tbsp olive oil in a pan, add onion and garlic. Sauté until soft.
- 3Add spinach and cook until wilted. Let cool slightly.
- 4In a bowl, mix spinach mixture, feta, herbs, 1 egg, salt, and pepper.
- 5Brush a baking dish with olive oil.
- 6Lay a sheet of phyllo in the dish, brush with oil. Repeat with 5 more sheets.
- 7Spread the spinach mixture evenly over the phyllo.
- 8Layer 6 more phyllo sheets on top, brushing each with oil.
- 9Brush the top with beaten egg and sprinkle with sesame seeds.
- 10Cut into squares before baking.
- 11Bake for 30-35 minutes until golden brown.
- 12Let cool slightly before serving.
