Description

Homemade energy bars packed with dried fruits and nuts, perfect for a quick Suhoor.

Ingredients

  • 1 cup dates, pitted
  • 1/2 cup dried apricots
  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2 tbsp chia seeds
  • 2 tbsp honey or maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions

    Line a square baking dish with parchment paper.

    Place dates and apricots in a food processor and pulse until chopped.

    Add nuts, seeds, cinnamon, and salt. Pulse until coarsely chopped.

    Add honey and pulse until the mixture sticks together.

    Press the mixture firmly into the prepared baking dish.

    Refrigerate for at least 1 hour.

    Cut into bars and store in an airtight container.

    These can be made ahead and stored in the refrigerator for up to 2 weeks.
