Description
Homemade energy bars packed with dried fruits and nuts, perfect for a quick Suhoor.
Ingredients
- 1 cup dates, pitted
- 1/2 cup dried apricots
- 1/2 cup almonds
- 1/2 cup walnuts
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 2 tbsp chia seeds
- 2 tbsp honey or maple syrup
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- 1Line a square baking dish with parchment paper.
- 2Place dates and apricots in a food processor and pulse until chopped.
- 3Add nuts, seeds, cinnamon, and salt. Pulse until coarsely chopped.
- 4Add honey and pulse until the mixture sticks together.
- 5Press the mixture firmly into the prepared baking dish.
- 6Refrigerate for at least 1 hour.
- 7Cut into bars and store in an airtight container.
- 8These can be made ahead and stored in the refrigerator for up to 2 weeks.
