Ingredients
- 2 slices whole grain bread
- 1 ripe avocado
- 2 eggs
- 1 tbsp olive oil
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh herbs (cilantro or parsley) for garnish
- Lemon juice (optional)
Instructions
- 1Toast the bread slices until golden brown.
- 2Mash the avocado in a bowl with a fork. Season with salt, pepper, and lemon juice if using.
- 3Heat olive oil in a non-stick pan over medium heat.
- 4Crack the eggs into the pan and cook to your preference (sunny-side up, over easy, or scrambled).
- 5Spread the mashed avocado on the toast slices.
- 6Top each slice with a cooked egg.
