Chicken and Vegetable Soup

Description
A nourishing soup with chicken and vegetables, perfect for breaking the fast.
Ingredients
- 500g chicken breast, diced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 bay leaf
- 8 cups chicken broth
- 1/2 cup small pasta (optional)
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add onion, carrots, and celery. Sauté for 5 minutes.
- 3Add garlic and chicken. Cook until chicken is no longer pink.
- 4Add zucchini, thyme, bay leaf, salt, and pepper.
- 5Pour in chicken broth and bring to a boil.
- 6Reduce heat and simmer for 20 minutes.
- 7If using pasta, add it and cook until tender.
- 8Remove bay leaf and stir in parsley.
- 9Serve hot with lemon wedges.
