Chicken and Vegetable Soup

Description

A nourishing soup with chicken and vegetables, perfect for breaking the fast.

Ingredients

  • 500g chicken breast, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 bay leaf
  • 8 cups chicken broth
  • 1/2 cup small pasta (optional)
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

    Heat olive oil in a large pot over medium heat.

    Add onion, carrots, and celery. Sauté for 5 minutes.

    Add garlic and chicken. Cook until chicken is no longer pink.

    Add zucchini, thyme, bay leaf, salt, and pepper.

    Pour in chicken broth and bring to a boil.

    Reduce heat and simmer for 20 minutes.

    If using pasta, add it and cook until tender.

    Remove bay leaf and stir in parsley.
