Stuffed Grape Leaves (Dolma)

Description
Grape leaves stuffed with seasoned rice and herbs, a delicious appetizer for Iftar.
Ingredients
- 1 jar grape leaves, drained and rinsed
- 1 cup rice, rinsed
- 1 onion, finely chopped
- 3 tbsp olive oil
- 1/4 cup pine nuts
- 1/4 cup currants or raisins
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 2 cups vegetable broth
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- 1In a pan, sauté onion in 2 tbsp olive oil until translucent.
- 2Add pine nuts and sauté until golden.
- 3Add rice, currants, herbs, spices, salt, and pepper. Stir to combine.
- 4Add 1/2 cup water, cover, and cook for 10 minutes until water is absorbed.
- 5Let the filling cool slightly.
- 6Lay a grape leaf flat, shiny side down. Place 1 tbsp of filling near the stem end.
- 7Fold the stem end over the filling, fold in the sides, and roll up tightly.
- 8Repeat with remaining leaves and filling.
- 9Arrange the rolls seam-side down in a pot.
- 10Mix vegetable broth, lemon juice, and 1 tbsp olive oil. Pour over the rolls.
- 11Place a plate on top to keep the rolls submerged.
- 12Cover and simmer for 45 minutes until rice is tender.
- 13Serve warm or at room temperature with yogurt sauce.
