Stuffed Grape Leaves (Dolma)

Description

Grape leaves stuffed with seasoned rice and herbs, a delicious appetizer for Iftar.

Ingredients

  • 1 jar grape leaves, drained and rinsed
  • 1 cup rice, rinsed
  • 1 onion, finely chopped
  • 3 tbsp olive oil
  • 1/4 cup pine nuts
  • 1/4 cup currants or raisins
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 2 cups vegetable broth
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

    In a pan, sauté onion in 2 tbsp olive oil until translucent.

    Add pine nuts and sauté until golden.

    Add rice, currants, herbs, spices, salt, and pepper. Stir to combine.

    Add 1/2 cup water, cover, and cook for 10 minutes until water is absorbed.

    Let the filling cool slightly.

    Lay a grape leaf flat, shiny side down. Place 1 tbsp of filling near the stem end.

    Fold the stem end over the filling, fold in the sides, and roll up tightly.

    Repeat with remaining leaves and filling.

    Arrange the rolls seam-side down in a pot.

    Mix vegetable broth, lemon juice, and 1 tbsp olive oil. Pour over the rolls.

    Place a plate on top to keep the rolls submerged.

    Cover and simmer for 45 minutes until rice is tender.

    Serve warm or at room temperature with yogurt sauce.
