Description

Eggs poached in a spiced tomato sauce, a hearty and nutritious dish for Suhoor.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/4 tsp chili flakes (optional)
  • 2 cans (400g each) diced tomatoes
  • 1 tbsp tomato paste
  • 6 eggs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Salt and pepper to taste

Instructions

    Heat olive oil in a large skillet over medium heat.

    Add onion and bell pepper, sauté until softened.

    Add garlic and spices, cook for 1 minute until fragrant.

    Pour in diced tomatoes and tomato paste. Simmer for 10 minutes until thickened.

    Make 6 wells in the sauce and crack an egg into each well.

    Cover and cook for 5-7 minutes until eggs are set but yolks are still runny.

    Sprinkle with parsley and feta cheese if using.

    Season with salt and pepper.

    Serve hot with bread for dipping.
