Description
Eggs poached in a spiced tomato sauce, a hearty and nutritious dish for Suhoor.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/4 tsp chili flakes (optional)
- 2 cans (400g each) diced tomatoes
- 1 tbsp tomato paste
- 6 eggs
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Salt and pepper to taste
Instructions
- 1Heat olive oil in a large skillet over medium heat.
- 2Add onion and bell pepper, sauté until softened.
- 3Add garlic and spices, cook for 1 minute until fragrant.
- 4Pour in diced tomatoes and tomato paste. Simmer for 10 minutes until thickened.
- 5Make 6 wells in the sauce and crack an egg into each well.
- 6Cover and cook for 5-7 minutes until eggs are set but yolks are still runny.
- 7Sprinkle with parsley and feta cheese if using.
- 8Season with salt and pepper.
- 9Serve hot with bread for dipping.
