Lamb Tagine with Prunes

Description

A sweet and savory Moroccan stew with tender lamb and dried fruits, perfect for Iftar.

Ingredients

  • 1 kg lamb shoulder, cut into chunks
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground coriander
  • 1 cup prunes, pitted
  • 1/2 cup dried apricots
  • 1/4 cup honey
  • 2 cups chicken or lamb stock
  • 1/4 cup toasted almonds
  • Fresh coriander for garnish
  • Salt and pepper to taste

Instructions

    Heat olive oil in a tagine or heavy pot. Brown the lamb pieces on all sides.

    Add onions and garlic, sauté until softened.

    Add all the spices and stir to coat the meat.

    Pour in the stock, bring to a boil, then reduce heat.

    Cover and simmer for 1.5 hours until meat is tender.

    Add prunes, apricots, and honey. Simmer for another 30 minutes.

    Adjust seasoning with salt and pepper.

    Garnish with toasted almonds and fresh coriander.
