Lamb Tagine with Prunes

Description
A sweet and savory Moroccan stew with tender lamb and dried fruits, perfect for Iftar.
Ingredients
- 1 kg lamb shoulder, cut into chunks
- 2 onions, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/2 tsp ground coriander
- 1 cup prunes, pitted
- 1/2 cup dried apricots
- 1/4 cup honey
- 2 cups chicken or lamb stock
- 1/4 cup toasted almonds
- Fresh coriander for garnish
- Salt and pepper to taste
Instructions
- 1Heat olive oil in a tagine or heavy pot. Brown the lamb pieces on all sides.
- 2Add onions and garlic, sauté until softened.
- 3Add all the spices and stir to coat the meat.
- 4Pour in the stock, bring to a boil, then reduce heat.
- 5Cover and simmer for 1.5 hours until meat is tender.
- 6Add prunes, apricots, and honey. Simmer for another 30 minutes.
- 7Adjust seasoning with salt and pepper.
- 8Garnish with toasted almonds and fresh coriander.
- 9Serve with couscous or bread.
