Description
A refreshing salad with quinoa, herbs, and vegetables, perfect for a light Suhoor meal.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 2 cups fresh parsley, finely chopped
- 1/2 cup fresh mint, finely chopped
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 red onion, finely diced
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- 1Cook quinoa in water according to package instructions. Let it cool completely.
- 2In a large bowl, combine cooled quinoa, parsley, mint, tomatoes, cucumber, and red onion.
- 3In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- 4Pour the dressing over the salad and toss to combine.
- 5Refrigerate for at least 1 hour before serving to allow flavors to meld.
