Description

A refreshing salad with quinoa, herbs, and vegetables, perfect for a light Suhoor meal.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 cups fresh parsley, finely chopped
  • 1/2 cup fresh mint, finely chopped
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 red onion, finely diced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

    Cook quinoa in water according to package instructions. Let it cool completely.

    In a large bowl, combine cooled quinoa, parsley, mint, tomatoes, cucumber, and red onion.
