Description

A hearty Moroccan soup with lentils, chickpeas, and aromatic spices, traditionally served during Ramadan.

Ingredients

  • 1/2 cup dried chickpeas, soaked overnight
  • 1/2 cup lentils
  • 250g lamb or beef, diced (optional, omit for vegetarian version)
  • 1 onion, finely chopped
  • 2 celery stalks, chopped
  • 2 tomatoes, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp tomato paste
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground black pepper
  • 1/4 cup all-purpose flour mixed with 1/2 cup water
  • 1 lemon, juiced
  • Salt to taste
  • 8 cups water or broth

Instructions

    In a large pot, sauté onions until translucent.

    Add meat (if using) and cook until browned.

    Add celery, tomatoes, herbs, spices, and tomato paste. Stir well.

    Add chickpeas, lentils, and water or broth. Bring to a boil.

    Reduce heat, cover, and simmer for 45 minutes until legumes are tender.

    Slowly add the flour mixture while stirring to thicken the soup.

    Simmer for another 10 minutes.

    Stir in lemon juice and adjust seasoning.
