Description
A hearty Moroccan soup with lentils, chickpeas, and aromatic spices, traditionally served during Ramadan.
Ingredients
- 1/2 cup dried chickpeas, soaked overnight
- 1/2 cup lentils
- 250g lamb or beef, diced (optional, omit for vegetarian version)
- 1 onion, finely chopped
- 2 celery stalks, chopped
- 2 tomatoes, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp tomato paste
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp ground black pepper
- 1/4 cup all-purpose flour mixed with 1/2 cup water
- 1 lemon, juiced
- Salt to taste
- 8 cups water or broth
Instructions
- 1In a large pot, sauté onions until translucent.
- 2Add meat (if using) and cook until browned.
- 3Add celery, tomatoes, herbs, spices, and tomato paste. Stir well.
- 4Add chickpeas, lentils, and water or broth. Bring to a boil.
- 5Reduce heat, cover, and simmer for 45 minutes until legumes are tender.
- 6Slowly add the flour mixture while stirring to thicken the soup.
- 7Simmer for another 10 minutes.
- 8Stir in lemon juice and adjust seasoning.
- 9Serve hot with dates and bread.
